Easter Is Coming!

Easter is coming!
Dutch families are running to the supermarket to collect all their favorite ingredients for the Easter brunch. We celebrate Easter on sunday and monday (“Easter monday”), so there is enough time to eat, drink and being together with family. Of course there are lots of eggs involved; painted, in chocolate or processed into dishes. This recipe of stuffed eggs is a Dutch tradition. I got the recipe from my mother, who got it from her mother. We serve it as a snack on birthday parties or at the easter brunch table.

  • 8 eggs, hard-boiled
  • 2 teaspoons of mayonnaise
  • 2 teaspoons of ketchup
  • 2 teaspoons of mustard
  • Curry powder
  • Salt and pepper

Cut the eggs in two pieces from top to bottom. Remove the egg yokes and put them in a bowl. Add the sauces and spices and mash it up. Put the contents of the bowl in a piping bag and fill the egg whites with it. Decorate with some curry powder.

So this was the traditional and simple version. Of course you can use all your creativity and add ingredients, to make the recipe your own. Feel free to share those in the comments!

A few suggestions:

  • Add pieces of smoked salmon to the filling and top with salmon eggs
  • Add honey to the filling and decorate with dill
  • Add pieces of ham to the filling and decorate with chives
