Vegter's Knijpertjes are thin waffels baked between two irons. They are often eaten with holidays. According to old Dutch tradition, they are served during the turn of the year together with the Rolletjes. The flat Knijpertjes then symbolize the old year (they are unrolled, open, which means we know all about the passing year) and the rolled up Rolletjes symbolize the new year (they are rolled, hiding the things to come in new year).
